- Is masala paste the same as curry paste?
- Yes. Masala paste is the Indian term for a wet, ready-cooked spice base, and curry paste is its Western shelf name. Ours is made in the Kashmiri rogan josh style, so it carries that signature deep red colour and warm, aromatic heat.
- How do I cook with it?
- Brown your meat or vegetables in a little oil, stir in the paste for a minute to release the aromas, then add tomato, a splash of water and a spoon of yoghurt. Simmer until tender for a rich, restaurant-style curry.
- How spicy is rogan josh paste?
- Medium. The colour comes from Kashmiri chilli, which is more about hue than heat, so the paste is warming and aromatic rather than fiery. Add fresh chilli if you like it hotter.
