Tamarind
Imli
Pressed from the sun-ripened pods of the tamarind tree across India's southern groves, this seedless pulp carries a deep, fruit-leather sourness edged with date-like sweetness. Supplied as a compressed slab to soak and strain, or as a ready concentrate, it is the backbone of sambar, rasam, chutneys and the souring note in Pad Thai, Worcestershire and Mexican aguas.

Questions
- Is imli the same as tamarind?
- Yes. Imli is the Hindi name for tamarind, the pulp of the Tamarindus indica pod. The slab and the paste are the same fruit in two formats.
- How do I use the slab versus the paste?
- Break off a piece of slab, soak in warm water for ten minutes, then squeeze and strain to make tamarind water. The concentrate paste dissolves straight into hot liquid, so it is faster for everyday cooking.
- Does it contain added sugar?
- No. Our tamarind is pure fruit pulp with nothing added, so its natural sweet-sour balance comes entirely from the ripe pod.
