La precocción fija el salvado y el germen al tiempo que reduce a la mitad el tiempo de cocción, dando un grano con notas a frutos secos, ligeramente dulce y con una masticación satisfactoria. Cuécelo al vapor para un upma salado, hiérvelo a fuego lento con jaggery y ghee para un lapsi, o mézclalo en frío en un tabbouleh brillante de hierbas.
